STRAWBERRY SPINACH SALAD:
Over the years, many
variations of Spinach Strawberry Salad have been taste tested, complimented by
other ingredients of choice including:
- Nuts - toasted or candied pecans, walnuts, almonds or
pine nuts.
- Cheese: gorgonzola, blue, goat cheese, feta or parmesan.
- Protein: chicken, salmon or shrimp.
- Other: red/green onions, blueberries or mandarin oranges.
- Dressing: simple vinaigrette, balsamic vinaigrette,
poppy seed, etc.
RASPBERRY
POPPY SEED VINIAGRETTE
This
dressing is slightly sweet & tangy, delicious & beautiful and homemade
to boot!
INGREDIENTS:
¼
cup grated/minced onion (half of a small onion)
½
cup raspberry vinegar (for recipe, go to may substitute white wine vinegar
¼
cup sugar, to taste
1
tsp dry mustard
1
tsp sea salt
1/2
cup extra-virgin olive oil
1/2
cup grapeseed oil
1-1/2
tsp poppy seeds
INSTRUCTIONS:
If using a BLENDER: Mince the onion. Add vinegar, sugar, mustard, & salt to the blender; mix until combined. With the blender running, add the oils in a thin stream through the hole in the top. Blend until well mixed. Add poppy seeds and pulse just until mixed.

using a BOWL: Whisk together vinegar, sugar, mustard, salt, minced onion, and
poppy seeds until well combined. Continue whisking while adding the oils in a
thin stream. Keep whisking until well combined.
If dressing is too thick, thin slightly by whisking in water a tablespoon at a time until reaching desired consistency. Refrigerate dressing; will keep for 3-4 weeks.
